Finding the right balance between performance, sensory experience and innovation.

Whey protein has long been the gold standard in sports nutrition, valued for its high biological value, fast absorption and excellent functional properties. Today, however, the market is facing a new reality. Increasing global demand, combined with supply constraints, is driving both limited availability and rising prices.

For manufacturers, this creates growing pressure, particularly in sports nutrition, where whey has traditionally been the dominant protein source. Brands are now challenged to maintain product quality and consumer expectations while improving cost efficiency and supply stability.

At the same time, this situation opens the door to new thinking. Reformulation is no longer just about replacing an ingredient: it is about finding the right balance between performance, sensory experience and innovation.

Finding the right level of replacement

Low whey replacement
For brands where continuity is key, a low level of whey replacement can be a highly effective approach. By replacing only a small fraction of whey, it is possible to maintain both taste and nutritional profile with minimal perceptible change, while still achieving cost improvements.

Balanced whey replacement
If you are open to slightly more flexibility, a balanced optimisation approach allows for a higher degree of replacement. Here, the full nutritional benefits can still be maintained, but some changes in taste or mouthfeel may occur. This trade-off can provide greater formulation freedom and cost efficiency.

High whey replacement
Finally, there is the opportunity to take a more innovative step. By increasing whey replacement and introducing complementary ingredients, you can go beyond simple substitution. This enables the development of products that deliver new nutritional benefits or more indulgent sensory experiences. Such an approach not only helps reduce reliance on whey but also creates the possibility to both retain existing customers and attract new ones.

From challenge to opportunity

In response to these market dynamics, in our Applications Laboratory in Malmö, Sweden, we have actively worked with a range of alternative ingredients and formulation strategies. Our focus has been to ensure that each solution remains practical, scalable and aligned with real product requirements.
Instead of viewing whey reduction as a compromise, we see it as an opportunity to rethink product design. Whether the goal is to closely match existing products or to explore entirely new concepts, the key lies in selecting the right combination of ingredients and technologies.

Example:

Whey Reduced Shake

Whey Reduced Shake
A protein-packed indulgent shake, with reduced whey content and the irresistible taste and mouthfeel of the traditional sport nutrition shakes.
